     Thinking of making these cookies - they sound yummy!  Not sure about the crystallized ginger, though.  I always have a problem - gets all sticky when I chop it up.

    Yes, I noticed that.  It says Lo SAT fat, but not Lo fat!

    There's a cookking show on cable-Lifestyle Channel - called

    The Best in Australia - where three chefs cook a dish each in the same kitchen- and they're served to a jury of four people- to decide which one wins.

    I love watching the way they have theitr own styles of preparing stuff.

    Yesterday's winner- (show's being repeated right now -)  seemed to have the jury almost sliding off their chairs.

    Sounds like a great recipe Julie  - I love the "just stir all ingredients together" kind. And its a healthy recipe as it contains fruit!!!  And don't worry about the fat content - its got wheatgerm and oats in it and everyone knows they absorb fat before it can be absorbed by you!!! Yes truly!!!!Devil

    If you have trouble chopping the ginger use a pair of kitchen scissors and cut it up - you can even flour the blades first - this also works well when you need to cut up marshmallows.

    Thanks for the tip, Paola.  I tried putting it in my mini-chopper - what a mess! 

    And thanks for that link, Bev.  I will take a look, though I can't imagine where I could find quail around here.  I made a batch of "enlightened brownies" for my picnic today.  They use less fat and sugar.   They smelled great, hope they taste as good!

    How timely!

    My U.K. Rufus friend just sent me the recipes for a dinner she had with friends. Said it was brilliant:

    Asian Marinade

    4x chicken breasts (pricked)

    2x sticks of lemon grass (crushed and chopped)

    1x small handfull of kaffir lime leaves (torn)

    2x tablespoon of soy sauce (light)

    1x thumb size of fresh ginger (peeled and chopped)

    1x fresh red or green chilli (finely chopped)

    1x lime (halved, juiced and skin squashed)

    10 x good lugs of olive oil

    1 x clove of garlic (crushed) - optional

    Mix all together, pour over the chicken and leave to marinate in fridge overnight, then cook next day for 40-45mins in a moderate hot oven.

    Ruby's Pudding (Friend of our friend, Imelda!)

    Non stick baking paper or silicone Teflon sheet

    5x Large egg whites

    5oz castor sugar

    1 tsp cornflour (sieved)

    1/2 pint double cream

    1x jar of Tesco Finest lemon curd

    1 tsp lemon juice (jiff)

    Pre-heat oven, Gas mark 4 ( or 180c)

    Whisk egg whites stiff (until you can turn the bowl upside down and they don't fall out)

    Add sugar 1x tablespoon at a time

    Add cornflour with last spoon mix

    Put the Teflon sheet (or non stick baking paper) on a rectangle baking tray

    Spread merangue mixture on Teflon sheet (or non-stick baking paper)

    Cook for 45 mins at bottom of oven

    Whisk the double cream until thick until it forms 'peaks' 

    Add lemon juice and mix in lemon curd

    Once the merangue has cooled, turn it upside down on to a sugared baking paper sheet

    Spread the lemon curd mixture over the merangue, cut the rough edges of the top and bottom so that the edges are neat (plus you can have them later!)

    Get the edge of the baking paper to use as a start of rolling the merangue over to form a 'swiss roll' affect, making sure you do not roll the paper into it

    Place the 'swiss roll' on to a serving dish (or freezer dish and cover with cling film and freeze, it will take 40 mins to defrost at room temp)

    And enjoy!!

    Okay, I am going to make these blueberry, ginger, white chocolate cookies to take to work on Monday.  I will post the recipe if they turn out at all well!  I love all the ingredients; just not sure how they will taste together.

    I have to bake a cake tomorrow for my mom's birthday. She has been asking for a chocolate cake with caramel icing. It is a very rich cake (it was my aunt's recipe) and the icing is almost too sweet. You actually have to dissolve the chocolate in hot water and then dump all of that into the flour, etc - also takes buttermilk. Extremely dark cake and super moist as well, but I hate being around that kind of stuff - too tempting. It is actually a family favorite so I dug out the recipe and am going to bake it tomorrow when I get home from church. I figure I can send most of it home with her and she can share it with her neighbors. Her 81st birthday was last Sunday, but since we had such a big thing last year, we are all doing something with her this year. And Evan's birthday party is next Saturday, so we will get together then. At least I don't have to bake the cake - he is getting an Oreo ice cream cake from Coldstone. I am doing a big soup dinner with about 20 people coming over. Thank goodness my kitchen is pretty much done.....a few odds and ends to finish, but all little things. If anyone wants the cake recipe, let me know and I will post it, but you will need a serious sweet tooth!
