CHOCOLATE MASCARPONE MUD CAKE
6 eggs
6 savoiardi biscuits (large or 8 small), ground
220g caster sugar
220g butter
220g almond meal
450 melted dark chocolate
220 mascarpone cheese or double cream (or half-half)
Line a 23cm tin with baking paper.
Prehead oven to 160 degrees
Cream caster sugar and butter until light and fluffy.
Add 6 eggs, one at a time and keep mixing.(don't worry if it curdles)
Fold in savoiardi and almond meal.
Fold in chocolate and cream.
Pour into tin. Do not lick spoon or tin!
Bake for 1 hour or until cracks appear in top of cake. Cool in tin. turn out onto wire rack. Cake will harden on standing.
When cold, pour over the granache.
Serve in THIN wedges with double cream and strawberries on the side. (emphasis here is on THIN - you heard me - THIN!!) :lol:
GRANACHE
375g dark chocolate, melted
1 cup cream
Mix together. Leave spoon alone.
Go for a jog.

Living on a really small budget, I have so many recipes it ain't even funny. This one is actually a friend's, and after having tried it when I figured I had most of everything needed around the house, I'm really glad I did!
TANGY CITRUS SNAPKISOBA (Yakisoba)
1/4 8 oz container Orange Marmalade
2 packages Maruchan instant Yakisoba
1 cup Plum Sake, separated into 3/4 cup and 1/4 cup servings
1/2 cup Berry herbal tea, brewed, "ready to drink"
1/4 cup Lemon herbal tea, brewed, "ready to drink"
2/3-3/3 cup Lemon Juice
Sri Racha, to taste
1 Coat bottom of medium frying pan with water, 2/3 cup sake, and Marmalade, on "Hi" heat
2 Let boil until mixture thickens just slightly. Add sauce packets for Yakisoba.
3 Let boil for another 2 minutes, add both servings of Yakisoba noodles, Sri Racha, and Lemon Juice
4 Let boil until mixture has primarily boiled off, should still be some liquid - add Sake, add Tea.
5 Let thicken until all of liquid has solidified. Fry noodles in bare pan for a bit afterwards - turn off heat, let chill before serving.
Bon apetit!
OPTIONAL: Though designed for chilled somen, Somen Tsuyu has a great, rustic flavour that actually really compliments this dish! Pour a little on your still-warm bowl of Yakisoba and expect a joy for your tastebuds.

Sri Racha? Is this a Japanese dish?

VEGETARIAN PASTA
Brown 2 medium chopped onions in a pan heated pan sprayed with cooking spray..... add 2 cloves chopped garlic..(or minced equivalent)
Add 2 tins chopped tomatoes (440g/15?oz)
2 teaspoons sugar
1/2 cup torn basil leaves (or squeezed tube/jar equiv.)
slurp to taste of sweet chilli sauce
1/2 cup sliced black olives(or to taste )
2 florets broccoli - cut into bite size pieces and micro waved to taste..
Simmer for 5-10 minutes... pour over pasta. .. top with shaved or grated parmesan...
serves four or more..

Oh my gosh! i am getting hungry just by reading the recipies especially the chocolate cake yum yum!!!! Sounds really rich! but mmmmm its chocolate :D yummy! must go out and buy ingredients! *runs to shop*.
Ooo i love Yakisoba! i have it all the time! well maybe because im half japanese so that might be why i have it all the time lol mmmm and sushi!

Man ALIVE that cake sounds good.
Well, we have a dwarf sour cherry tree (it's still over 6 feet tall) and it just PRODUCES! I got a gallon (pitted and cooked) before I left for vacation, 2 sets of friends picked pounds and pounds and today I got 6 quarts pitted (probably about 5 cooked).
So here it is: Sour Cherry Pie.
4 cups sour cherries, pitted. 1 cup sugar (I use sugar subsitute, it doesn't affect anything). 3 tablespoons quick-cooking tapioca (powder. You can also use cornstarch or arrowroot). 1 tablespoon cherry brandy (Optional but HIGHLY recommended, Cherry Heering is what we use but I suppose kirsch would work the same). 1/8 teaspoon salt and 1 teaspoon lemon peel. 1/2 teaspoon almond flavoring. Combine all this stuff and let it sit for 20 minutes, stirring occasionally. Cook on medium heat until thickened.
Pie crust: 2 cups flour, 1 stick butter cut into small chunks and cut together until blended, add roughly 4 to 5 tablespoons cold water (a little at a time until it holds together) and roll out/cut out/do whatever you have to do to get it into a receptacle, whether that be a pie dish, baking dish, whatever. Pour cherries in and bake at 375 Fahrenheit (give or take 25 degrees) for roughly 1/2 hour, whenever it's bubbly.
You can do fancy latticework if you feel like it, but this pie and crust are positively foolproof and SO good. Best with fresh cherries just off the tree, but of course anything works. Oh... one note... tapioca gives the juices a whitish color so if that bothers you, you can add food coloring. Sorry about the US measurements, you guys.

OK people....need help here. My mum was baking some kind of a carrot cake and she was busy doing other stuff at the same time and accidentally added salt instead of sugar....and it turned out to be heaps yucky of course. So bin it went.
And she's upset about it because she spent ages getting the stuff ready..what's something that I could do now quickly to cheer her up?????
